Step 1: Make the Filling

Next, pour in the fresh lemon juice and a little salt and pepper. Now, mix it all with your hands or a spoon until everything is evenly combined. The texture should be a little rustic. Don’t try to make a smooth paste.

Give it a little taste test! Now is your chance to adjust the seasonings.

Step 2: Prep the Cucumber “Boats”

Take your cucumber and slice it in half lengthwise. See the seeds in the middle? Use a small spoon or a melon baller to gently scoop them out. You’re creating a little “boat” for the filling.

Be careful not to scoop too much out. You still want to have a good amount of crunchy cucumber wall.

You’ll be left with two long, hollowed-out cucumber halves.
