These cucumber bites are the perfect snack for a hot day or a light appetizer for your next gathering. They’re a simple, no-cook twist on a classic Greek salad, with a savory, herby filling that’s all about fresh ingredients. They’re easy to make and even easier to eat.

Ingredients

  • 1 large English cucumber
  • 6 oz crumbled feta cheese
  • 8 pitted and chopped Kalamata olives
  • ¼ finely chopped red onion
  • 8 chopped cherry tomatoes
  • 1 tbsp fresh chopped basil
  • 1 tsp dried oregano
  • 1 tsp fresh lemon juice
  • 1 tbsp extra-virgin olive oil
  • ½ tsp salt & pepper (or to taste)
  • 1 tbsp fresh chopped basil or mint (for garnish)

Instructions

  1. Make the Filling: In a medium bowl, combine the feta, olives, red onion, tomatoes, basil, and oregano. Add the lemon juice, salt, and pepper. Gently mix everything together until well combined.
  2. Prep the Cucumbers: Slice the cucumber in half lengthwise. Using a small spoon, scoop out the seeds to create shallow “boats.”
  3. Stuff and Slice: Spoon the feta mixture into each cucumber boat, pressing it down lightly. Then, slice each filled cucumber into 8 bite-sized pieces.
  4. Finish & Serve: Arrange the bites on a platter. Drizzle with extra-virgin olive oil and sprinkle with fresh basil or mint. Serve immediately.

Notes

  • Serving Suggestions: These are fantastic on their own, but also go great with a simple green salad or hummus and pita bread.
  • Tips & Tricks: Using a block of feta and crumbling it yourself gives the best texture. For a milder onion flavor, soak the chopped red onion in cold water for a few minutes before adding it to the mix.
  • Storage: The bites are best enjoyed fresh. If you have leftovers, store them in an airtight container in the fridge for up to 24 hours. The cucumber will lose some of its crunch over time. Do not freeze.
