  • 1 lb ground beef (lean works best)
  • 1 packet taco seasoning
  • ¾ cup water
  • 8 flour tortillas (taco size)
  • 1 cup vegetable oil
  • 1 (15-ounce) can refried beans
  • 1 (10-ounce) can enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: diced tomatoes, sliced green onions, sliced olives, sour cream

Instructions

  1. Preheat & Brown. Preheat your oven to 400°F. In a large skillet, brown and crumble the ground beef into a fine texture. Drain any grease, then stir in the taco seasoning and water. Simmer until the sauce thickens.
  2. Crisp the Tortillas. In a separate skillet, heat the vegetable oil over medium heat. Shallow-fry one tortilla at a time for 3-4 minutes, flipping frequently, until it’s golden brown and crisp. Set aside to drain on a wire rack.
  3. Heat the Beans. Warm the refried beans in a microwave-safe bowl for a minute to make them easy to spread.
  4. Assemble. Take one crispy tortilla and spread a layer of warm beans, followed by a spoonful of the seasoned ground beef. Place a second crispy tortilla on top. On this top tortilla, spread about two tablespoons of enchilada sauce, then a generous handful of cheese. Repeat for the remaining pizzas.
  5. Bake. Place the pizzas on a nonstick baking sheet. Bake for 8-10 minutes, or until the cheese is bubbly and melted.

Notes

  • Serving: Serve pizzas whole and top with your favorite garnishes like diced tomatoes, sliced green onions, or a dollop of sour cream.
  • Tips: A meat masher is great for getting the ground beef extra fine, just like Taco Bell’s. Heating the refried beans makes them a breeze to spread without tearing the tortillas.
  • Storage & Reheating: Store leftovers in an airtight container in the fridge for up to 2 days. To reheat, the oven or air fryer is best to keep the tortillas crisp—try 350°F for 5-7 minutes. Microwaving is not recommended as it will make the tortillas soft.
