This isn’t just a recipe; it’s a cozy, one-pan wonder that takes all the flavors we love from classic tacos and transforms them into a hearty, family-friendly casserole. It’s the perfect weeknight meal for busy families.

  • 1 lb ground beef (lean works best!)
  • 1 packet taco seasoning
  • ¾ cup water (or as directed on seasoning packet)
  • ½ cup salsa con queso
  • 3 (8-inch) flour tortillas
  • 2 cups shredded Mexican cheese blend, divided

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook until it’s browned and crumbled. Drain any excess grease.
  2. Add flavor: Stir in the taco seasoning and water. Cook for a couple of minutes until the sauce thickens. Remove from heat and stir in the salsa con queso.
  3. Layer it up: Preheat your oven to 350°F. Lightly spray an 8-inch round baking pan with nonstick spray. Place one tortilla on the bottom. Spread ⅓ of the meat mixture over the tortilla, then sprinkle ⅓ of the cheese on top. Repeat two more times, ending with a final layer of cheese.
  4. Bake: Bake for 15-20 minutes, or until the cheese is melted, bubbly, and the edges are golden brown.
