A surprisingly fun and flavorful side dish that turns a simple ear of corn into delicious, mini “ribs.” The high heat makes the corn curl, creating a crispy and satisfying texture. Perfect for a weeknight meal or a barbecue appetizer.

For the Corn:

  • 2 pieces of fresh corn, husked, and silk removed
  • 1 tbsp smoked paprika
  • 1 tbsp olive oil
  • Pinch of salt and pepper
  • Pinch of dried thyme

For the Lime and Chili Dressing:

  • 1/2 red onion, finely diced
  • 1/2 red chili, finely chopped
  • 1/2 lime, squeezed
  • 3 tbsp olive oil
  • Salt & pepper to taste
  • Handful of fresh parsley and basil, chopped

Instructions

  1. Prep the Corn: Preheat oven to 200°C. Stand corn cobs upright and, using a sharp, heavy knife, carefully slice each one lengthwise into four “ribs.”
  2. Season: Place the corn ribs on a baking sheet. Drizzle with olive oil, then toss with smoked paprika, salt, pepper, and dried thyme. Make sure every piece is well-coated.
  3. Bake: Bake for 25 minutes. Flip the ribs, then return to the oven for another 15-20 minutes, or until deeply golden and curled.
  4. Make the Dressing: While the corn bakes, combine the diced red onion, chopped chili, fresh lime juice, olive oil, and herbs in a small bowl. Season with salt and pepper.
  5. Serve: Transfer the hot, crispy corn ribs to a platter and pour the dressing over the top. Serve immediately.

  • Tips & Tricks: For easier cutting, microwave the corn for 1-2 minutes to slightly soften the cob. This recipe is naturally vegan and gluten-free.
