This recipe is proof that you don’t need a lot of ingredients to make an amazing weeknight dinner. We’re talking juicy chicken breasts, a zesty green sauce, and a blanket of melted cheese—all baked to perfection in under 30 minutes. It’s a taste of Mexico you can pull off on even your busiest days.

  • 16 oz jar of your favorite salsa verde
  • 4 boneless, skinless chicken breasts
  • 1 tbsp extra-virgin olive oil
  • ¼ tsp kosher salt
  • ⅛ tsp black pepper
  • 1 tsp garlic powder
  • 2 cups grated Monterey Jack cheese
  • 3 roma tomatoes, diced
  • ⅓ cup chopped fresh cilantro or parsley
  • Cooked white rice, for serving

Instructions

  1. Prep the oven and dish. Preheat your oven to 425°F. Lightly coat a 9×13-inch baking dish with non-stick spray.
  2. Get the chicken ready. Lay the chicken breasts on a cutting board and pound them to an even 1-inch thickness. This is a crucial step! It makes sure the chicken cooks quickly and evenly.
  3. Season. Rub the chicken with olive oil, then sprinkle both sides with salt, pepper, and garlic powder.
  4. Assemble. Place the seasoned chicken in a single layer in the baking dish. Pour the salsa verde over the top, making sure each piece is completely covered.
  5. Add cheese. Top with a generous, even layer of grated Monterey Jack cheese.
  6. Bake. Place the dish in the preheated oven and bake for 20-22 minutes. You’ll know it’s ready when the cheese is bubbly and melted, and the thickest part of the chicken reaches 165°F on a meat thermometer.
  7. Garnish and serve. Take the dish out of the oven. Sprinkle with fresh diced tomatoes and chopped cilantro. Serve hot over a bed of white rice.
