  • 1 cup long-grain white rice (like jasmine or basmati)
  • Water (to the 1-cup fill line on your rice cooker pot)
  • 1 tbsp grapeseed oil (or other neutral oil)
  • ½ tsp pink Himalayan salt
  • 2 tbsp chopped cilantro (stems included)
  • Juice and zest from 1 lime

Instructions

  1. Prep the Rice: Rinse the rice in a fine-mesh strainer until the water runs mostly clear. Add the rinsed rice to your rice cooker pot, then fill with water to the “1-cup” line. Add the grapeseed oil and salt, then stir gently.
  2. Cook: Close the lid and set your rice cooker to the “Plain” setting. Let it cook until the machine beeps or switches to “keep warm.”
  3. Finish & Fluff: Once cooked, open the lid and gently fluff the rice with a spatula or rice paddle. Stir in the chopped cilantro, lime zest, and lime juice.
  4. Serve: Taste and add more salt if needed. Serve immediately and enjoy!
