This isn’t your average pasta dish. This is creamy, dreamy comfort food, a staple at family get-togethers in Mexico. It’s simple, fast, and uses a few key ingredients to create a luxurious sauce that will have you coming back for more.

Ingredients

  • 1/2 box spaghetti
  • 1 tbsp salt (for pasta water)
  • 1/2 stick butter
  • 1/4 onion, diced
  • 1 (8 oz) package cream cheese
  • 8 ounces sour cream or Mexican crema
  • 1/2 tsp salt (for sauce)
  • Fresh parsley and Parmesan cheese for topping (optional)

Instructions

  1. Boil the pasta: Fill a large pot with water and bring it to a rolling boil. Add 1 tablespoon of salt, then the spaghetti. Cook until al dente, according to package directions. Drain and set aside.
  2. Make the sauce: While the pasta cooks, melt the butter in a large skillet over medium heat. Add the diced onion and cook for 1 minute until it’s soft and smells amazing.
  3. Add the cream cheese: Stir in the cream cheese, breaking it up with your spatula. Continue stirring for 3-4 minutes until it’s a creamy, lumpy mixture.
  4. Finish the sauce: Turn the heat off. Stir in the sour cream and 1/2 teaspoon of salt. The sauce will become silky smooth. Taste and add more salt if needed.
  5. Toss and serve: Add the cooked spaghetti directly to the skillet. Toss with tongs until every strand is coated in the creamy sauce. Garnish with parsley and Parmesan cheese, then serve immediately.
