Craving that classic fast-food Mexican Pizza? Skip the drive-thru and make a better, crunchier version at home. This recipe is all about simple ingredients and big flavor, layered between two crispy tortillas for the ultimate comfort food. It’s fast, easy, and will make you a kitchen legend.

Ingredients

  • 1 lb ground beef
  • 1 chopped onion
  • 16 small fajita-sized flour tortillas
  • 1 can refried beans, warmed
  • Taco Sauce
  • 2 cups shredded Colby Jack cheese
  • Diced tomatoes, for topping
  • Chopped green onions, for topping
  • Vegetable oil, for frying

The Spice Blend:

  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1/4 tsp cayenne
  • 1 TBSP minced garlic

Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, cook the ground beef and chopped onion. Break up the meat with a spatula until it’s no longer pink. Drain any extra grease.
  2. Season: Add all the spices to the beef and stir. Let it simmer on low. Add the garlic and cook for about a minute until it’s fragrant.
  3. Fry Tortillas: In a separate skillet, add a thin layer of vegetable oil. Fry one tortilla at a time for 1-2 minutes per side until it’s crispy and golden. Place it on a paper towel-lined plate to drain.
  4. Assemble: Lay one fried tortilla on a baking sheet. Spread a generous layer of warm refried beans on it, followed by the seasoned beef and a sprinkle of cheese. Top with a second fried tortilla.
  5. Bake: Spoon taco sauce over the top tortilla, spreading it to the edges. Add the remaining cheese on top. Bake in a preheated oven at 400°F for about 10 minutes, or until the cheese is melted and bubbling.
  6. Garnish & Serve: Right out of the oven, garnish with fresh diced tomatoes and chopped green onions. Slice into wedges and serve immediately.

Notes

  • Serving Suggestions: This pizza is a whole meal on its own, but it’s amazing with a side of Mexican rice or a simple corn salad.
  • Make it Your Own: Feel free to swap the ground beef for ground turkey or a plant-based alternative. For more heat, add extra cayenne or a few dashes of your favorite hot sauce.
  • Storage & Reheating: This is best served fresh! But if you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, use the oven at 350°F for 5-10 minutes to bring back some of that crunch. Don’t use the microwave, or you’ll get a soggy pizza.
