This Mexican Lasagna is a hearty, flavorful twist on a classic comfort food. Layers of seasoned ground beef, vibrant vegetables, and cheese are stacked with corn tortillas to create an easy and satisfying casserole.   • 1 cup corn kernels, fresh or frozen
  • 2 cloves garlic, minced
  • 1 (15 oz) jar salsa
  • 4 cups shredded cheddar cheese
  • 12 (8-inch) corn tortillas

Instructions

  1. Prep: Preheat your oven to 425°F. Lightly grease a 9×13-inch baking dish.
  2. Brown the Meat: In a large skillet over medium-high heat, add olive oil. Crumble in the ground beef and season with chili powder, coriander, cumin, salt, and pepper. Cook until the beef is browned, about 5 minutes.
  3. Add Veggies: Stir in the drained black beans, corn, diced red onion, diced bell pepper, and minced garlic. Cook for another 5 minutes, letting the vegetables soften.
  4. Create the Sauce: Reduce heat to a simmer. Pour in the salsa and stir to combine. Simmer for about 7 minutes, allowing the sauce to thicken slightly.
  5. Layer Up:
    • Place a single layer of corn tortillas on the bottom of the prepared dish, overlapping as needed.
    • Spread 1/3 of the meat mixture evenly over the tortillas.
    • Sprinkle with 1/3 of the shredded cheese.
  6. Repeat: Repeat the layering process two more times, ending with a generous layer of cheese on top.
  7. Bake: Bake for 20-25 minutes, or until the cheese is melted, bubbly, and the sauce is hot.
  8. Rest: Let the lasagna stand for 10 minutes before slicing and serving.
