  • 20 oz super sweet frozen corn
  • 3 tablespoons salted butter
  • 3 tablespoons mayonnaise
  • ½ cup chopped cilantro
  • 2 limes, cut into wedges
  • ½ teaspoon Tajin (to taste)
  • ⅓ cup grated Parmesan
  • 1 ½ cups crushed hot Cheetos

Instructions

  1. Cook the Corn. Cook the frozen corn according to the package directions, either on the stovetop or in the microwave, until the kernels are tender and plump.
  2. Make the Base. Immediately drain the hot corn and transfer it to a mixing bowl. Add the butter and stir until it’s completely melted and coats all the kernels.
  3. Build the Cups. For each of your three serving cups, start with a layer of the buttered corn. Add a tablespoon of mayonnaise to each cup and stir it in.
  4. Add the Flavor. Sprinkle in some chopped cilantro, squeeze a bit of fresh lime juice, and shake on some Tajin. Stir everything together so the flavors are fully mixed.
