This creamy, zesty dip is an easy way to get all the amazing flavors of Mexican street corn in a single scoop. Ready in just 15 minutes, it’s the perfect appetizer for your next party.

Ingredients

  • 2 cups sweet corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp fresh lime juice
  • 1 tsp chili powder (adjust to taste)
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled Cotija or feta cheese
  • Tortilla chips for serving

Instructions

  1. Prepare the Corn: Cook your corn. If using fresh on the cob, boil for 5-7 minutes or grill until lightly charred. Slice the kernels off the cob. If using frozen, microwave for 3-5 minutes until warm.
  2. Make the Base: In a large bowl, whisk the mayonnaise and sour cream together until smooth and creamy.
  3. Add Flavor: Stir in the fresh lime juice, chili powder, and half of the cheese and cilantro. Mix well.
  4. Combine: Gently fold the prepared corn into the creamy mixture with a spatula until every kernel is coated.
  5. Serve: Transfer the dip to a serving bowl. Garnish with the remaining cheese and cilantro. Serve immediately with tortilla chips.

  • Serving Suggestions: This dip is great on its own, but also pairs well with chicken wings or mini burgers. For a beautiful presentation, fan tortilla chips around the bowl on a large platter.
