This salad is a total showstopper! It’s fresh, vibrant, and packed with all the zesty, satisfying flavors of a chunky salsa, but with a surprising creamy twist. It’s the perfect light-but-filling meal for a busy weeknight.

For the Salad

  • 1 head romaine lettuce, chopped
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup frozen corn kernels, thawed
  • 2 Roma tomatoes, chopped
  • 1 large avocado, diced
  • 1 small red onion, diced
  • ½ small jicama, chopped
  • ½ cup fresh cilantro, chopped
  • ¼ cup cotija cheese

For the Cilantro Yogurt Dressing

  • ½ cup fresh cilantro
  • ⅓ cup Greek yogurt
  • 2 tbsp fresh lime juice
  • 1 garlic clove
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp cumin

Instructions

  1. Make the Dressing: Toss all the dressing ingredients—cilantro, Greek yogurt, lime juice, garlic, olive oil, salt, and cumin—into a small blender. Blend until it’s a beautiful pale green and super smooth. Give it a taste and adjust the seasoning if you want. Set it aside so the flavors can meld.
  2. Assemble the Salad: Get your biggest bowl or platter. Spread the chopped romaine on the bottom. Arrange the rest of the salad ingredients in separate piles on top of the lettuce. This makes the final dish look amazing! Finish with a sprinkle of fresh cilantro and cotija cheese.
  3. Serve: Drizzle the dressing over the salad right before you serve it.

  • Serving Suggestions: This salad is a complete meal on its own, but it also goes great with warm tortillas or a side of fresh guacamole.
  • Tips & Tricks: To keep your avocado from browning, don’t dice it until the last minute. The lime juice in the dressing also helps it stay green once everything is mixed.
  • Storage: The key is to keep everything separate! Chop your veggies and store them in an airtight container in the fridge for up to 3 days.
