  • 12 lbs boneless, skinless chicken (thighs or breasts)
  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 3 cloves fresh garlic, minced
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • ¼ tsp ground cinnamon (optional, but highly recommended)

Instructions

  1. Make the Marinade: In a large Ziploc bag, combine the olive oil, lime juice, minced garlic, chili powder, smoked paprika, oregano, cumin, salt, and cinnamon.
  2. Marinate the Chicken: Add the chicken to the bag and seal it, pressing out any excess air. Massage the bag to coat the chicken evenly. Place it in the fridge for at least 2 hours, or for a deeper flavor, let it sit overnight.
  3. Cook to Perfection: Remove the chicken from the bag and discard the marinade. Grill or bake until the thickest part of the chicken reaches an internal temperature of 165°F (74°C).
