  • 4 boneless, skinless chicken breasts, cooked
  • 8 ounces Nacho Cheese Doritos, crushed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cans (10.5 ounces each) Cream of Chicken soup
  • 1 can (10 ounces) Rotel (diced tomatoes and green chilis)
  • ¾ cup whole milk
  • 1 cup shredded Cheddar Cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook chicken breasts in the oven for 20-25 minutes. Once cooked, shred the chicken with a fork.
  3. In a large bowl, mix the shredded chicken with the black beans and Rotel.
  4. In a separate bowl, stir together the Cream of Chicken soup and milk until smooth.
  5. Crush half of the Doritos and spread them evenly on the bottom of a 9×13-inch baking dish.
  6. Spread the chicken and bean mixture over the Doritos.
  7. Pour half of the creamy soup mixture over the chicken layer, then sprinkle with half of the shredded cheese.
  8. Repeat the layers: add the remaining crushed Doritos, the rest of the chicken mixture, the remaining soup, and finally, the last of the cheese.
  9. Bake for 20-25 minutes, until the cheese is bubbly and the casserole is heated through.

  • Serving Suggestions: This dish is a complete meal on its own, but it pairs wonderfully with a simple side salad or Mexican rice. Garnish with chopped cilantro, sour cream, or sliced green onions for a fresh finish.
