A zesty and fresh twist on a classic, this Mexican Caesar salad swaps out old traditions for a fiesta of flavor. It’s a quick, no-cook meal that’s perfect for a weeknight dinner or a fast lunch.

Ingredients

Scale
  • 2 heads romaine lettuce, chopped
  • 1 cup cooked corn
  • 1 cup cooked black beans
  • 1 medium avocado, sliced or cubed
  • 12 cups tortilla strips or crumbled chips
  • ½ cup chopped cilantro
  • ¼ cup crumbled Cotija cheese
  • ½ cup Caesar salad dressing
  • Lime wedges (optional)
  • ¼ tsp Mexican seasoning blend (optional)

Instructions

  1. Prep the Greens: In a large bowl, add the chopped romaine lettuce.
  2. Add the Goodies: Layer in the corn, black beans, avocado, tortilla strips, cilantro, and Cotija cheese.
  3. Dress it Up: Pour the Caesar dressing over the salad. If you’re using the Mexican seasoning, whisk it into the dressing first to infuse the flavor.
  4. Toss and Serve: Gently toss everything together with tongs or large spoons until all the ingredients are coated. Serve immediately, with a squeeze of fresh lime juice on top for a final burst of flavor.

Notes

  • Serving Suggestions: This salad is hearty enough to be a meal on its own, but it also pairs great with grilled chicken, shrimp, or a bowl of tortilla soup.
  • Pro Tip: Don’t over-dress the salad! A little goes a long way. Start with less dressing than you think you need, toss, and then add more if necessary.
  • Storage: For the best results, store the dressing and salad ingredients in separate airtight containers in the fridge for up to two days. This keeps the lettuce and tortilla strips from getting soggy.
