Instant Pot Cilantro Lime Rice

This recipe makes the easiest, fluffiest cilantro lime rice you’ll ever taste. Inspired by your favorite burrito bowl, this zesty, herbaceous rice is a perfect side dish or base for any meal. The Instant Pot makes it completely hands-off and foolproof.

Ingredients

  • 2 cups long-grain white rice (like Basmati or Jasmine)
  • 2 cups vegetable broth
  • ¾ cup water
  • 2 tablespoons neutral oil (canola, vegetable, or grapeseed)
  • 3 tablespoons fresh lime juice, divided
  • Zest of one lime
  • ½ cup fresh chopped cilantro
  • ½ teaspoon salt

Instructions

  1. Pour the vegetable broth, water, oil, and 2 tablespoons of the lime juice into your Instant Pot.
  2. Add the rice and stir gently to combine everything.
  3. Lock the lid and set the steam release valve to “Sealing.” Press the “Rice” button.
  4. Once the pot beeps, let it sit for 5 minutes for a natural pressure release. After 5 minutes, use a hot pad to carefully turn the valve to “Venting” to release any remaining pressure.
  5. When the lid is off, transfer the rice to a large bowl.
  6. Sprinkle the remaining 1 tablespoon of lime juice, lime zest, chopped cilantro, and salt over the rice.
  7. Use a fork to gently fluff and stir until all the ingredients are mixed in. Serve immediately.

Notes

Serving Suggestions: This rice is amazing as a base for burrito bowls or as a side with grilled chicken, fish tacos, or steak fajitas.

Tips & Tricks: Use a fresh lime for the best flavor—bottled juice just doesn’t compare. For a little heat, add a pinch of chili powder or a finely diced jalapeño before cooking.

Storage: Store any leftovers in an airtight container in the fridge for up to 4 days. You can also freeze it for up to 3 months. When reheating, add a tablespoon of water or broth to the rice before microwaving to restore its moisture.
