A classic that’s easy to love. This recipe makes a simple, savory ground beef quesadilla that’s perfect for a quick dinner or a fun family lunch. It’s got that crispy, golden tortilla and a super cheesy, flavorful filling that hits the spot every time.

Ingredients

  • 1 lb lean ground beef
  • 1 onion, finely diced
  • 1/2 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 4 large burrito-sized tortillas
  • 2 tbsp butter
  • 1 cup shredded cheese (Monterey Jack and cheddar blend)

Instructions

  1. Cook the beef. Heat a large skillet over medium heat. Add the ground beef and diced onion. Break up the meat with a spatula as it cooks. Stir until the beef is browned and the onion is soft.
  2. Add the spices. Drain any extra grease from the pan. Stir in the chili powder, oregano, salt, garlic powder, and cumin. Cook for 2-3 minutes, letting the spices get fragrant.
  3. Assemble and cook. Reduce heat to medium-low. Melt about 1/2 tablespoon of butter in the skillet. Place one tortilla in the pan. Sprinkle cheese over the whole tortilla, then spoon the beef filling onto one side.
  4. Fold and press. Let it cook for 2-3 minutes until the cheese starts to melt. Fold the empty side of the tortilla over the filling. Press down gently with your spatula to flatten.
  5. Finish cooking. Cook for another few minutes, flipping once, until both sides are golden and crispy. Repeat for the remaining quesadillas.

Notes

Serving Suggestions: Serve with sour cream, salsa, or guacamole for dipping. A simple side salad works great too!

Tips & Tricks: Don’t overfill your quesadilla or it will be hard to fold and flip. A firm press with the spatula helps the cheese melt and holds everything together.

Storage & Reheating: Store leftovers in an airtight container in the fridge for up to 3 days. To get the best crispy texture back, reheat in a skillet over low heat instead of using the microwave.
