  • 23 tablespoons canola or olive oil
  • 1 ½ cups long-grain white rice
  • ½ cup finely diced onion
  • 23 cloves garlic, minced
  • 3 cups chicken broth (or water)
  • ¾ cup tomato sauce
  • ½ teaspoon ground cumin
  • 1 teaspoon Kosher salt
  • Optional: Chopped cilantro for garnish

Instructions

  1. Toast the Rice: Heat oil in a large skillet over medium heat. Add the rice and stir constantly for 5-7 minutes until it turns a light, golden brown. This is key for a fluffy texture!
  2. Cook Aromatics: Push the rice to the side. Add the onion and cook until soft and see-through. Add the garlic and cook for one more minute, then mix everything together.
  3. Add Liquid: Pour in the chicken broth, tomato sauce, cumin, and salt. Stir well and bring the mixture to a rapid boil.
  4. Simmer: Reduce heat to the lowest setting, cover the skillet with a tight-fitting lid, and let it simmer for 25-35 minutes. Don’t peek! The steam is doing all the work.
  5. Fluff and Serve: Turn off the heat and let the rice sit, covered, for 5 minutes. Then, uncover and fluff with a fork. Taste and adjust salt if needed. Garnish with cilantro.
