A sizzling skillet of chicken, peppers, and onions, bursting with flavor and ready in under 30 minutes. This recipe is a home run for any night of the week.

Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 onion, sliced
  • 3 bell peppers (any color), sliced
  • 2 tbsp olive oil
  • 1 fresh lime

Homemade Seasoning:

  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1/2 tsp oregano
  • Salt and black pepper to taste

Instructions

  1. Mix the seasoning. In a small bowl, combine all the seasoning spices. Stir until fully mixed.
  2. Season the chicken. Pat the chicken dry, then rub the seasoning all over each breast.
  3. Cook the chicken. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 7-8 minutes per side, until golden brown and cooked through. Remove and let rest.
  4. Sauté the veggies. Add the sliced onions and peppers to the same skillet. Cook for 4-5 minutes, stirring frequently, until they are crisp-tender.
  5. Combine. Slice the rested chicken into strips. Return the chicken to the skillet with the vegetables. Squeeze fresh lime juice over everything and toss to combine.

Notes

Serving: Serve hot with warm tortillas and your favorite toppings like sour cream, pico de gallo, and avocado. Sides like Mexican rice and black beans are great too!

Tips & Tricks: Use chicken thighs for a juicier result. You can mix the seasoning blend and slice the veggies a day ahead to save time.
