A fun and easy recipe that brings together the best of tacos, pizza rolls, and mozzarella sticks in a single, handheld treat. Perfect for a quick family dinner or a game day snack!

  • 1 lb ground beef (I use 90/10 or 85/15)
  • 1 packet taco seasoning mix
  • 1 tube Pillsbury Pizza Dough
  • 5 Colby Jack and cheddar cheese sticks, halved
  • 4 tbsp butter, melted
  • 1 tsp garlic powder
  • 1 tsp dried parsley

Instructions

  1. Prep the oven and pan: Preheat your oven to 425°F. Line a large baking sheet with parchment paper or spray with cooking spray.
  2. Cook the beef: Brown the ground beef in a large skillet over medium-high heat. Break it up with a wooden spoon as it cooks. Once no pink remains, drain any excess fat. Return the skillet to the stove and stir in the taco seasoning. Let the meat cool.
  3. Assemble the sticks: Unroll the pizza dough and cut it into 10 equal rectangles. Place about a tablespoon of the cooled taco meat in the center of each rectangle. Top the meat with half a cheese stick.
  4. Roll and seal: Carefully roll the dough up, starting from one end. Make sure to pinch all the seams closed to prevent the cheese from leaking out.
  5. Add the topping: In a small bowl, mix the melted butter, garlic powder, and dried parsley. Brush this mixture generously over each taco stick.
  6. Bake: Place the sticks on the prepared baking sheet. Bake for 10-12 minutes, or until golden brown. Let them cool slightly before serving—the cheese will be super hot!

  • Serving Suggestions: These are amazing on their own, but even better with dips like salsa, sour cream, or guacamole.
  • Tips & Tricks: For a little kick, use pepper jack cheese sticks or add a pinch of red pepper flakes to the ground beef. You can also use a different cheese blend like queso quesadilla.
  • Make-Ahead/Storage: The taco meat can be made up to 3 days in advance. You can also freeze the assembled, unbaked sticks for up to 3 months. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven or air fryer for a crispy finish.
