  • 8 burrito-sized flour tortillas
  • 1 lb ground beef (80/20 or leaner)
  • 2 (10 oz) cans enchilada sauce (mild)
  • 1 (10 oz) can Rotel (diced tomatoes with green chiles)
  • 1 (15 oz) can black beans, drained
  • 1 (4 oz) can diced green chiles
  • 2 cups shredded Mexican cheese blend
  • 4 green onions, chopped

Instructions

  1. Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, brown the ground beef over medium heat. Break it up as you go. Once cooked, drain any excess grease.
  3. Reduce heat to low and stir in the taco seasoning, Rotel, black beans, and diced green chiles. Let it simmer for about 5 minutes until the flavors blend and the mixture thickens slightly.
  4. Lay a tortilla flat and spoon about ¼ cup of the beef mixture down the center. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
  5. Pour the enchilada sauce over the top, making sure everything is coated.
  6. Sprinkle the shredded cheese and chopped green onions over the sauce.
  7. Bake for 30 minutes, or until the cheese is bubbly and golden.
  8. Let the enchiladas rest for about 5 minutes before serving.
