A warm hug in a bowl, this one-pot soup takes all the rich, smoky flavors of classic beef enchiladas and makes them easy. No rolling tortillas, no fuss—just pure comfort food perfection.

  • 1 tbsp olive oil
  • 1 lb ground beef (90/10 is best)
  • 1 small red onion, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 (15 oz) cans tomato sauce
  • 1 (minced) chipotle pepper + 2 tsp adobo sauce
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp oregano
  • 1 tsp salt
  • ¾ tsp black pepper
  • 2 (15 oz) cans black beans, drained and rinsed
  • 4 cups chicken stock
  • ¼ cup fresh cilantro, minced

For Toppings: Shredded cheddar cheese, Fritos, sour cream or Greek yogurt

Instructions

  1. Sizzle the Beef: Heat olive oil in a large soup pot over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, for 5-7 minutes until browned.
  2. Add Veggies: Add the chopped onion, bell pepper, and minced garlic. Cook, stirring, for another 5-7 minutes until the vegetables soften.
  3. Mix in Spices: Stir in the tomato sauce, chipotle, adobo sauce, chili powder, cumin, oregano, salt, and pepper. Mix until everything is well combined and fragrant.
  4. Simmer to Perfection: Pour in the black beans, chicken stock, and cilantro. Bring to a boil, then reduce heat and simmer gently for at least 15 minutes to let the flavors meld.

Notes

  • Serving Suggestions: Top with shredded cheese, a dollop of sour cream or Greek yogurt, and a handful of Fritos for the ultimate meal. Serve with cornbread or a simple side salad.
  • Make-Ahead & Storage: This soup gets even better overnight. Store in an airtight container in the fridge for up to 3-4 days. It also freezes beautifully for up to 3 months.
  • Tips & Tricks: Don’t rush browning the beef or cooking the veggies. Those steps build the deep flavor base of the soup. For a milder soup, skip the chipotle and adobo sauce.
