BBQ Chicken Quesadillas

This is my go-to recipe for a quick and cheesy dinner! It’s the perfect mix of smoky BBQ and classic Tex-Mex flavors, all wrapped up in a crispy tortilla.

Ingredients

  • 1 tbsp olive oil
  • ½ red onion, thinly sliced
  • 2 cups cooked chicken, chopped or shredded
  • ½ cup BBQ sauce
  • 1 cup cooked corn (canned, frozen, or fresh)
  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack or cheddar cheese
  • 2 tbsp butter

Instructions

  1. Sauté the Onion: Heat a skillet over medium heat with the olive oil. Cook the red onion for 3-4 minutes until it’s soft and translucent.
  2. Make the Filling: In a medium bowl, combine the cooked onions, chicken, BBQ sauce, and corn. Mix well until everything is evenly coated.
  3. Assemble: Wipe out the skillet and melt ½ tbsp of butter over medium heat. Place one tortilla in the skillet. On one half of the tortilla, sprinkle ¼ cup of cheese, then add a layer of the chicken mixture, and top with another ¼ cup of cheese. Fold the empty half over the filling.
  4. Cook to Perfection: Cook for 2-3 minutes per side, until the tortilla is golden-brown and crispy and the cheese is completely melted.
  5. Serve: Slide the quesadilla onto a cutting board. Repeat with the remaining ingredients. Cut into wedges and serve warm with your favorite toppings.

Notes

Serving Suggestions: These quesadillas are great on their own, but I love them with a dollop of sour cream or a sprinkle of fresh cilantro. For a full meal, serve with a simple side salad or some black beans and rice.

Tips & Tricks:

  • For the best melt, shred your own cheese from a block instead of using pre-shredded.
  • A store-bought rotisserie chicken is a great shortcut to save a ton of time.
  • A layer of cheese on both the bottom and top of the filling acts like a “glue” to hold everything together.

Storage & Reheating: Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, use a skillet or an air fryer to get that crispy texture back. Avoid the microwave—it’ll make the tortillas soggy.
