A cheesy, saucy, and comforting meal that tastes just like traditional enchiladas—but with a fraction of the work. This casserole is all about maximum flavor with minimum effort, perfect for a cozy weeknight dinner.

  • 1 lb boneless, skinless chicken breasts (about 2 large)
  • 14 oz enchilada sauce (your favorite brand)
  • 6 medium corn tortillas
  • 3 cups shredded Monterey Jack cheese

Instructions

1. Cook the chicken: Cut chicken breasts into 3 pieces each. Place in a pot or Dutch oven, cover with enchilada sauce. Simmer on low-to-medium heat for about 20 minutes, or until cooked through and tender.

2. Shred the chicken: Remove chicken from the pot and use two forks to shred it. Return shredded chicken to the pot with the remaining sauce and stir to coat.

3. Prep the dish: Preheat your oven to 375°F (190°C). Spread ¼ cup of sauce on the bottom of an 8×8-inch baking dish.

4. Layer the casserole: Place two tortillas on the bottom of the dish, cutting them to fit. Add ⅓ of the shredded chicken, ⅓ of the sauce, and ⅓ of the cheese. Repeat this process two more times to create three layers.

5. Bake and serve: Bake uncovered for 20-30 minutes, until the sauce is bubbly and the cheese is golden brown.

  • Serving Suggestions: Garnish with fresh cilantro, chopped green onions, a dollop of sour cream, or sliced avocado. Pair with a simple side salad or Mexican rice.
  • Tips & Tricks: No chicken breasts? Use boneless, skinless chicken thighs for an even more tender result. A store-bought rotisserie chicken works great to save time. For a little heat, add a pinch of cayenne pepper or diced jalapeños to the sauce.
